Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the chocolate chips and dried cherries so they are evenly distributed throughout the dough.
Baking
- Using a cookie scoop or spoon, drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, leaving space for them to spread.
- Place in the preheated oven and bake for 12-15 minutes, or until the edges are set but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
- Enjoy while they're warm with gooey chocolate and chewy cherries!
Notes
For added flavor, consider a drizzle of melted chocolate or a sprinkle of sea salt. Store cookies in an airtight container at room temperature for up to 1 week, or freeze for up to 3 months.
