Ingredients

  • 1 cup butter, softened Make sure it's softened, not melted.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 each egg
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Add-ins
  • 1 cup apple, peeled and chopped Fresh apples add moisture and flavor.
  • 1 cup caramel bits or soft caramel, chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Line two baking sheets with parchment paper to prevent sticking.
  3. In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy. Add in the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients into the wet mixture and blend thoroughly.
  5. Gently fold in the chopped apples and caramel bits until evenly distributed.
Baking
  1. Using a tablespoon or cookie scoop, drop mounds of cookie dough onto the prepared baking sheets, leaving space between each cookie.
  2. Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly golden on the edges.
  3. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze in a single layer, then transfer to an airtight container. Reheat in the microwave for 10-15 seconds for a fresh-baked taste.
