Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- Line two baking sheets with parchment paper to prevent sticking.
- In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy. Add in the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients into the wet mixture and blend thoroughly.
- Gently fold in the chopped apples and caramel bits until evenly distributed.
Baking
- Using a tablespoon or cookie scoop, drop mounds of cookie dough onto the prepared baking sheets, leaving space between each cookie.
- Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly golden on the edges.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
