Ingredients

  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 cloves garlic minced
  • 1 bottle 12 oz beer
  • 2 cups beef broth
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  • Preheat the Oven: Begin by preheating your oven to 350°F (175°C).
  • Brown the Ribs: In a large Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and pepper, then brown them on all sides. Remove the browned ribs and set them aside.
  • Sauté Vegetables: In the same pot, add the diced onion and carrots. Sauté until they become soft and fragrant. Add the minced garlic, cooking for an additional minute.
  • Deglaze with Beer: Pour in the beer, scraping any browned bits from the bottom of the pot. This adds depth to your sauce!
  • Combine Ingredients: Return the short ribs to the pot. Add the beef broth, thyme, and bay leaves.
  • Bake: Bring the mixture to a simmer, cover with a lid, and place it in the oven. Let it bake for 2.5 to 3 hours, or until the ribs are fork-tender.
  • Serve: Once cooked to perfection, serve your ribs hot and enjoy the comforting flavors!
