  • 3 pieces ripe bananas, mashed Use very ripe bananas for the sweetest flavor.
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • a pinch salt
  • 1/2 cup chopped nuts (walnuts or pecans) Optional.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9x5-inch loaf pan.
  2. In a large mixing bowl, cream together the softened butter and sugar until fluffy. Add in the mashed bananas, eggs, and vanilla extract; mix until combined.
  3. In another bowl, whisk together the flour, baking soda, and salt.
  4. Gradually incorporate the dry ingredients into the wet ingredients, stirring gently until just combined—don’t overmix!
  5. If using, fold in the chopped nuts just until evenly distributed without over-mixing.
  6. Pour the batter into your prepared loaf pan and place it in the oven. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once done, allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For serving, consider adding a dollop of whipped cream or a scoop of vanilla ice cream.
