Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 9x5-inch loaf pan.
- In a large mixing bowl, cream together the softened butter and sugar until fluffy. Add in the mashed bananas, eggs, and vanilla extract; mix until combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually incorporate the dry ingredients into the wet ingredients, stirring gently until just combined—don’t overmix!
- If using, fold in the chopped nuts just until evenly distributed without over-mixing.
- Pour the batter into your prepared loaf pan and place it in the oven. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Once done, allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For serving, consider adding a dollop of whipped cream or a scoop of vanilla ice cream.
