  • 1 can Coconut milk
  • 2 cups Vegetable broth
Seasoning and Flavoring
  • 2 tablespoons Red curry paste
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • Salt and pepper To taste
Vegetables
  • 1 cup Mixed vegetables (carrots, bell peppers, snow peas)
  • Fresh cilantro For garnish

Method
 

Prepare the Broth
  1. In a large pot, combine vegetable broth and coconut milk over medium heat. Stir well to combine.
Add the Curry
  1. Gradually introduce red curry paste, soy sauce, and lime juice to the pot. Mix thoroughly and bring to a gentle simmer.
Incorporate Vegetables
  1. Toss in your mixed vegetables, stirring gently. Allow them to cook down, softening while still retaining a bit of crunch—approximately 5-7 minutes.
Cook the Dumplings
  1. Add your dumplings to the pot and let them simmer in the broth for about 10 minutes or until fully cooked. If you’re using store-bought, check package instructions for timing.
Final Seasoning
  1. Season with salt and pepper to taste, adjusting as necessary according to your preference.
Garnish and Serve
