  • 1 cup shredded carrots
  • 1 cup bell peppers, sliced
  • 1/2 cup cucumber, sliced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup peanuts, chopped For topping
Peanut Dressing Ingredients
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil

Method
 

Preparation
  1. Start by shredding the cooked chicken and slicing the bell peppers and cucumber. Shred the carrots and chop the green onions and cilantro.
Dressing
  1. In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, honey (or sugar), sesame oil, and a pinch of salt and pepper until smooth. You may need to adjust the consistency with a little water if it’s too thick.
Assembly
  1. In a large mixing bowl, combine the mixed greens, shredded chicken, carrots, bell peppers, cucumber, green onions, and cilantro.
  2. Pour the peanut dressing over the salad and toss gently until everything is well-coated.
Serving
  1. Transfer the salad to a serving platter and sprinkle with chopped peanuts. Enjoy immediately for the best texture!
