  • 2 lbs potatoes, thinly sliced
  • 1 cup cheese (cheddar or a Mexican blend), shredded
  • 1 cup sour cream
  • 1 can diced green chilies
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil or butter for greasing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil or butter.
  2. In a spacious mixing bowl, combine the sour cream, diced green chilies, garlic powder, onion powder, cumin, along with a sprinkle of salt and pepper. Mix well to create a creamy sauce.
  3. In the greased baking dish, lay down half of the sliced potatoes evenly. Pour half of your creamy mixture over the potatoes. Then, sprinkle half of the shredded cheese on top.
  4. Repeat the process by adding a second layer with the remaining sliced potatoes, the rest of the sour cream mixture, and top it off with the remaining cheese.
Baking
  1. Cover the dish with aluminum foil and bake for 45 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the cheese is beautifully bubbly and golden.
  3. Allow the dish to cool for a few minutes before serving.

Notes

Consider swapping out the shredded cheese for pepper jack for an extra kick! Pre-cook your sliced potatoes until they’re slightly tender before layering them if desired. Experiment with additional toppings like chopped cilantro, diced jalapeños, or crispy bacon bits.
