Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil or butter.
- In a spacious mixing bowl, combine the sour cream, diced green chilies, garlic powder, onion powder, cumin, along with a sprinkle of salt and pepper. Mix well to create a creamy sauce.
- In the greased baking dish, lay down half of the sliced potatoes evenly. Pour half of your creamy mixture over the potatoes. Then, sprinkle half of the shredded cheese on top.
- Repeat the process by adding a second layer with the remaining sliced potatoes, the rest of the sour cream mixture, and top it off with the remaining cheese.
Baking
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the cheese is beautifully bubbly and golden.
- Allow the dish to cool for a few minutes before serving.
Notes
Consider swapping out the shredded cheese for pepper jack for an extra kick! Pre-cook your sliced potatoes until they’re slightly tender before layering them if desired. Experiment with additional toppings like chopped cilantro, diced jalapeños, or crispy bacon bits.
