Casserole Base
  • 2 cups cooked rice Use any variety of rice.
  • 2 cups cooked chicken, diced Leftover chicken can be used.
  • 1 cup broccoli florets Fresh or frozen can be used.
  • 1 cup bell peppers, diced Any color of bell peppers works.
  • 1/2 cup teriyaki sauce Ensure it's halal-friendly.
  • 1 cup shredded cheese Your favorite kind of cheese.
  • 1 tablespoon olive oil For sautéing vegetables.
  • to taste Salt and pepper Adjust according to preference.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a pan over medium heat, add olive oil. Toss in the diced bell peppers and broccoli florets, and sauté for about 5-7 minutes until they soften slightly.
  3. In a large bowl, combine cooked rice, sautéed vegetables, diced chicken, and teriyaki sauce. Stir until everything is well-coated.
  4. Pour the chicken and rice mixture into a greased casserole dish, spreading it evenly.
  5. Sprinkle the shredded cheese on top, covering the rice and chicken mixture generously.
  6. Place the dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly.
  7. Remove the casserole from the oven and let it cool for a few minutes. Serve warm.

Notes

You can customize the casserole with additional toppings such as crispy fried onions or sesame seeds for extra crunch. Ensure chicken is fully cooked before use, and avoid overloading on sauce to prevent sogginess.
