Preparation
- Cut the watermelon into cubes, using about one cup.
- In a mixing glass or cocktail shaker, add the mint leaves and agave syrup (if using). Gently crush the mint leaves to release their essential oils.
- Add the cubed watermelon to the glass and muddle it together with the mint.
- Pour in the lime juice and stir well to combine.
- Fill a glass with ice cubes and strain the watermelon and mint mixture over the ice.
- Top it off with sparkling water or club soda and stir gently.
- Garnish with a sprig of mint or a slice of lime and serve.
Notes
Chill your ingredients for a more refreshing mocktail. Prepare the mix ahead of time but add sparkling water just before serving to retain fizz. Leftover mix can be stored for up to 2 days, but may separate.
