Main Ingredients
  • 1 cup fresh watermelon, cubed Choose a ripe, sweet watermelon.
  • 10 leaves fresh mint
  • 2 tablespoons lime juice
  • 1 tablespoon agave syrup or honey Optional, adjust according to taste.
  • as needed Sparkling water or club soda
  • as needed Ice cubes

Method
 

Preparation
  1. Cut the watermelon into cubes, using about one cup.
  2. In a mixing glass or cocktail shaker, add the mint leaves and agave syrup (if using). Gently crush the mint leaves to release their essential oils.
  3. Add the cubed watermelon to the glass and muddle it together with the mint.
  4. Pour in the lime juice and stir well to combine.
  5. Fill a glass with ice cubes and strain the watermelon and mint mixture over the ice.
  6. Top it off with sparkling water or club soda and stir gently.
  7. Garnish with a sprig of mint or a slice of lime and serve.

Notes

Chill your ingredients for a more refreshing mocktail. Prepare the mix ahead of time but add sparkling water just before serving to retain fizz. Leftover mix can be stored for up to 2 days, but may separate.
