Ingredients
  

For the Salad
  • 1 cup quinoa Rinse under cold water before cooking.
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled Optional, can be substituted.
For the Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Rinse the quinoa in a fine-mesh strainer under cold water for about 2-3 minutes.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and set aside to cool.
  3. Chop the cherry tomatoes, cucumber, bell pepper, and red onion into bite-sized pieces.
Combine and Dress
  1. In a large bowl, combine the cooked quinoa, halved cherry tomatoes, diced cucumber, bell pepper, red onion, and sliced olives.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the quinoa salad and toss gently to combine.
  3. Sprinkle crumbled feta cheese on top for an extra burst of flavor.
Chill and Serve
  1. Allow the salad to chill in the refrigerator for about 15 minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to three days. Best enjoyed chilled. You can substitute feta with Halal-friendly cheese or omit it for a dairy-free version.
