  • 4 fillets salmon fillets (approximately 6 oz each)
  • 1/2 cup honey
  • 1 cup fresh pineapple, diced Canned pineapple chunks can be used as a substitute.
  • 3 tablespoons soy sauce Ensure it's Halal-certified.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • Salt and pepper, to taste
Optional Garnish
  • Green onions or cilantro For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together the honey, soy sauce, minced garlic, and ginger to make the marinade.
  3. Place the salmon fillets in a baking dish, skin-side down, and season with salt and pepper.
  4. Scatter the diced pineapple around the salmon in the baking dish.
  5. Drizzle the honey-soy mixture over the salmon and pineapple.
Cooking
  1. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
  2. Remove from the oven and let it rest for a minute before garnishing with green onions or cilantro if desired.

Notes

For substitutions, if fresh pineapple isn’t available, use canned pineapple in juice. Keep an eye on the salmon while it cooks to avoid overcooking.
