Main Ingredients
  • 2 pieces boneless, skinless chicken breasts Cut into bite-sized pieces for better flavor absorption.
  • 1 cup pineapple juice
  • 1/2 cup soy sauce Ensure it's Halal-compliant. Use coconut aminos for soy-free.
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon water To mix with cornstarch.
  • 1 cup diced pineapple For the sauce.
  • green onions for garnish

Method
 

Preparation
  1. Cut chicken breasts into bite-sized pieces and pat dry with a paper towel.
  2. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, and minced garlic.
  3. Add chicken pieces to the bowl and marinate for at least 15 minutes.
Cooking
  1. In a large pan over medium-high heat, add a splash of oil.
  2. Once hot, add marinated chicken and cook until browned and cooked through, about 7-10 minutes.
  3. In a separate bowl, mix cornstarch and water until smooth. Pour in reserved marinade and bring to a low boil until thickened.
  4. Add diced pineapple to the pan with chicken, pour over thickened sauce, and mix well to combine.
Serving
  1. Garnish with green onions and serve hot over steamed rice or with your favorite veggies.

Notes

For extra flavor, consider adding ginger or red pepper flakes. Avoid overcrowding the pan while cooking.
