Method
Cooking the Meat
- In a large skillet over medium heat, add the ground beef or chicken. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Seasoning
- Drain any excess fat. Stir in the taco seasoning and a splash of water. Simmer for 3-5 minutes, allowing the flavors to meld together.
Preparing Tortillas
- Lay out your tortillas on a clean surface. On each tortilla, evenly spread a generous scoop of the seasoned meat.
Adding Cheese & Veggies
- Sprinkle shredded cheddar cheese over the meat followed by lettuce and diced tomatoes.
Rolling It Up
- Carefully roll each tortilla tightly, tucking the ingredients in as you go. Secure with toothpicks if necessary.
Heating It Up
- Place the rolled tortillas seam-side down in a skillet over medium heat. Cook for about 2-3 minutes per side until the tortillas are golden brown and the cheese has melted.
Slicing & Serving
- Remove from the skillet and let cool for a minute. Slice the roll-ups into bite-sized pieces and serve with dollops of sour cream and salsa on the side.
Notes
For a lighter option, consider using ground turkey or plant-based meat substitutes. Avoid overstuffing your tortillas to prevent them from becoming difficult to roll.
