Preheat the oven to 350°F (175°C).
Cook the jumbo shells according to package directions; drain and set aside.
In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Stir in the cream cheese, taco sauce, and taco seasoning until everything is well combined.
Stuff each shell with the flavorful beef mixture and place them in a baking dish.
Sprinkle shredded cheese generously over the top of the stuffed shells.
Bake in the preheated oven for about 20-25 minutes or until heated through and the cheese is melted and bubbly.
Garnish with chopped green onions if desired and serve hot.
