Taco Stuffed Baked Potatoes: A Comforting Twist on a Classic!

Ingredients
  

  • 4 large russet potatoes
  • 1 pound ground beef or your choice of protein
  • 1 packet taco seasoning
  • 1 cup shredded cheese Cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup diced tomatoes fresh or canned
  • 1 cup lettuce shredded
  • Optional toppings: jalapeños avocado, cilantro, and salsa

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Bake the Potatoes: Scrub the potatoes clean, prick each one a few times with a fork, and coat them lightly in olive oil. Bake directly on the oven rack for about 45-60 minutes until they are tender.
  • Cook the Ground Beef: While your potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook until browned. Drain excess fat if necessary. Stir in the taco seasoning and a little water according to the packet instructions; simmer for a few minutes until well combined.
  • Stuff the Potatoes: Once the potatoes are done, carefully cut a slit along the top of each one and fluff the insides with a fork. Stuff generously with the seasoned ground beef mixture.
  • Add Cheese & Bake Again: Top with shredded cheese and return to the oven for about 5-10 minutes until the cheese is melted and gooey.
  • Top & Serve: Remove from the oven, and add your desired toppings such as sour cream, diced tomatoes, and shredded lettuce. Serve hot and enjoy!
