  • 1 lb ground beef (or ground turkey for a lighter option)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (8 oz) tomato sauce
  • 1 packet taco seasoning
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup corn (frozen or canned)
  • 1/2 cup diced onions (optional)
Optional Toppings
  • sliced jalapeños
  • diced tomatoes
  • sour cream
  • chopped cilantro

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  3. Stir in the black beans, tomato sauce, taco seasoning, corn, and onions. Let it simmer for about 5 minutes to combine the flavors.
Baking
  1. In a baking dish (about 9x13 inches), layer half of the tortilla chips at the bottom.
  2. Spoon half of the beef mixture over the chips, then sprinkle with 1 cup of shredded cheese.
  3. Repeat the layering process with the remaining chips, beef mixture, and top with the remaining cheese.
  4. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  5. Let cool for a few minutes, then serve topped with your favorite garnishes.

Notes

To avoid soggy tortilla chips, layer them wisely and let the casserole sit before serving. For extra heat, add diced jalapeños to the beef mixture or as a topping.
