Preparation
- Start by mincing the onions and shredding the cheese if not already done. This will ensure a smooth cooking process.
- In a large skillet over medium heat, brown the ground beef, breaking it apart with a wooden spoon. Cook until no longer pink, about 5-7 minutes. Drain excess fat, if any.
- Stir in the refried beans, diced onions, and taco sauce into the skillet. Cook for an additional 2-3 minutes until everything is heated through and well-combined.
Assembly
- Lay a large flour tortilla flat on a clean surface. Spoon some of the beef and bean mixture in the center. Sprinkle with a generous amount of cheddar cheese.
- Roll the tortilla tightly around the filling and place seam-side down in a baking dish. Repeat for the remaining tortillas.
Cooking
- Preheat your oven to 350°F (175°C). Bake the tortillas for about 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and serve hot, garnished with chopped green onions and a dollop of sour cream on top.
Notes
If you have leftovers, store in an airtight container in the refrigerator for up to 3 days, or wrap tightly in foil and freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 15-20 minutes to maintain cheesiness.
