Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another large bowl, beat together the softened butter and sugar until light and fluffy.
  4. Add in the egg, vanilla extract, and almond extract, mixing until well blended.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Use a cookie scoop to drop dough onto a greased baking sheet.
  7. Bake for 8-10 minutes or until the edges turn a light golden brown.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
  9. If using, whip up some frosting and drizzle over the cooled cookies.

Store cookies in an airtight container at room temperature for up to a week; freeze for up to 3 months. Watch baking times closely as ovens vary.
