  • 1 cup fresh lemon juice Juice from fresh lemons preferred.
  • 1 tablespoon lemon zest Zest from fresh lemons.
  • ΒΌ cup water
  • 2 tablespoons cornstarch
  • as needed powdered sugar For dusting.

Preparation
  1. In a medium saucepan, whisk together the granulated sugar, water, and cornstarch until smooth.
  2. Pour in the fresh lemon juice and lemon zest. Stir to combine.
  3. Cook over medium heat, stirring constantly, until the mixture reaches a rolling boil (about 5 minutes).
  4. Reduce the heat and let it simmer for 15 minutes, ensuring you keep stirring occasionally.
  5. Remove the mixture from heat and allow it to cool slightly.
  6. Using a small spoon or ice cream scoop, drop spoonfuls of the mixture onto a parchment-lined baking tray.
  7. While still warm, dust the drops with powdered sugar, allowing them to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. You can freeze the drops for up to a month; thaw in the fridge before serving.
