Ingredients
  

  • 1 block of firm tofu pressed and cubed
  • 2 cups mixed salad greens
  • 1 cup bell peppers sliced
  • 1/2 cup carrots shredded
  • 1/2 cup cucumbers sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey or agave syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch optional for crispy tofu
  • Sesame seeds for garnish

Method
 

  1. Prepare the Tofu: If you like crispy tofu, toss the cubed tofu in cornstarch. This will give it a nice texture when cooked.
  2. Cook the Tofu: Heat a non-stick pan over medium heat, add a little oil, and fry the tofu until golden brown on all sides. Then, remove it from the heat and set aside.
  3. Mix the Salad: In a large bowl, combine the mixed greens, sliced bell peppers, shredded carrots, sliced cucumbers, and thinly sliced red onion.
  4. Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, honey, and sesame oil.
  5. Combine: Add the crispy tofu to the salad and drizzle the dressing on top. Toss everything gently to combine, ensuring the dressing coats all ingredients evenly.
