Ingredients
  

For the Gnocchi
  • 2 medium sweet potatoes Ensure they are soft when cooked.
  • 1.5 cups all-purpose flour You may not need all the flour; the goal is a soft dough.
  • 1 large egg Large size is preferred.
  • 0.5 teaspoon salt
  • 0.25 teaspoon nutmeg Optional for added flavor.

Method
 

Cooking the Sweet Potatoes
  1. Peel and cube your sweet potatoes, then steam or boil them until they’re soft, typically around 15-20 minutes. Drain carefully.
Mashing the Potatoes
  1. Once cooked, mash the sweet potatoes until smooth and let them cool slightly.
Mixing Ingredients
  1. In a mixing bowl, combine the cooled mashed sweet potatoes with the egg, salt, and nutmeg. Gradually add flour until the dough comes together.
Shaping the Gnocchi
  1. Turn the dough out onto a floured surface, divide it into four sections, and roll each into a rope about 1/2 inch thick. Cut into 1-inch pieces and shape as desired.
Cooking the Gnocchi
  1. Bring a large pot of salted water to a boil. Drop the gnocchi in batches; once they float to the top, they’re done. Remove with a slotted spoon.
Serving
  1. Toss the cooked gnocchi in your favorite sauce or simply with butter and sage.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze the uncooked gnocchi for up to 2 months. For reheating, boil frozen gnocchi or sauté cooked gnocchi for added crispness.
