Preparation
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- Boil or steam the sweet potato until tender. Once cooled, mash it until smooth to yield about 1 cup.
- In a mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the mashed sweet potatoes, sugar, vegetable oil, eggs, and vanilla extract until well blended.
- Gradually add the dry ingredients to the wet ingredients, stirring until combined. Be careful not to overmix!
Baking
- Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Serving
- Once cooled, dust the cake with powdered sugar or add your favorite toppings before slicing and serving.
