  • 1 cup mashed sweet potatoes (about 1 medium sweet potato) Use fresh sweet potatoes for best flavor.
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (optional for dusting) For dusting or toppings of your choice.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. Boil or steam the sweet potato until tender. Once cooled, mash it until smooth to yield about 1 cup.
  3. In a mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
  4. In another bowl, whisk together the mashed sweet potatoes, sugar, vegetable oil, eggs, and vanilla extract until well blended.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until combined. Be careful not to overmix!
Baking
  1. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Serving
  1. Once cooled, dust the cake with powdered sugar or add your favorite toppings before slicing and serving.

Notes

This cake pairs beautifully with vanilla ice cream, whipped cream, or fresh berries. Ensure not to overmix for a fluffy texture.
