Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash your sweet potatoes until they are smooth and creamy.
- Add the milk, brown sugar, melted butter, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes. Mix until combined and fluffy.
- Transfer the sweet potato mixture into a greased baking dish and spread it out evenly.
Baking
- Bake in the preheated oven for about 25 minutes.
- Sprinkle the mini marshmallows over the top of the casserole.
- Return to the oven for an additional 10-15 minutes, or until the marshmallows are golden brown and fluffy.
Serving
- Remove from oven, let it cool lightly, then serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 2 months; let cool completely before freezing.
