  • 4 cups sweet potatoes, cooked and mashed Fresh sweet potatoes preferred for maximum flavor.
  • 1/2 cup milk Can substitute with a non-dairy milk if preferred.
  • 1/2 cup brown sugar Adjust to taste if you prefer less sweetness.
  • 1/4 cup butter, melted Use unsalted butter for better flavor control.
  • 1 teaspoon vanilla extract Adds depth of flavor.
  • 1/2 teaspoon cinnamon For warmth and spice.
  • 1/4 teaspoon nutmeg Freshly grated if possible for best taste.
  • 2 cups mini marshmallows A light layer on top will toast nicely.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash your sweet potatoes until they are smooth and creamy.
  3. Add the milk, brown sugar, melted butter, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes. Mix until combined and fluffy.
  4. Transfer the sweet potato mixture into a greased baking dish and spread it out evenly.
Baking
  1. Bake in the preheated oven for about 25 minutes.
  2. Sprinkle the mini marshmallows over the top of the casserole.
  3. Return to the oven for an additional 10-15 minutes, or until the marshmallows are golden brown and fluffy.
Serving
  1. Remove from oven, let it cool lightly, then serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 2 months; let cool completely before freezing.
