  • 4 pieces boneless, skinless chicken breasts
  • 1 cup teriyaki sauce
  • 1 cup pineapple chunks (with juice)
  • 1 piece bell pepper, sliced
  • 1 piece onion, sliced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Green onions for garnish

Method
 

Preparation
  1. Begin by setting your crockpot on a low setting.
  2. Place the chicken breasts at the bottom of the crockpot.
  3. Pour over the teriyaki sauce and pineapple chunks (including the juice).
  4. Scatter the sliced bell pepper, onion, and minced garlic over the chicken.
  5. Sprinkle salt and pepper to taste over the mixture.
  6. Cover the crockpot with its lid and cook on low for 4-6 hours until the chicken is cooked through and tender.
  7. Once done, shred the chicken in the sauce with two forks and garnish with green onions before serving.

Notes

For substitutions, turkey breast or tofu can be swapped for chicken. Make sure to follow cook times to avoid overcooking.
