  • 1 cup pineapple chunks (canned or fresh) Fresh pineapple adds more sweetness.
  • 1/2 cup soy sauce Adjust according to taste.
  • 1/4 cup packed brown sugar
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger (optional) Adds extra flavor.
  • 1/4 cup chopped green onions (for garnish) Sprinkle on top before serving.

Preparation
  1. In a bowl, combine soy sauce, brown sugar, minced garlic, and ginger (if using). Stir it well to create a smooth mixture.
  2. Place the chicken thighs at the bottom of the crockpot, ensuring they cover the bottom evenly.
  3. Scatter pineapple chunks over the chicken, enhancing the overall flavor.
  4. Drizzle the prepared sauce over the chicken and pineapple, making sure everything is coated well.
  5. Cover the crockpot, set it to high for 4 hours or low for 6 hours, and let the flavors meld together.
  6. When cooking time is up, check that the chicken is fully cooked (internal temperature should reach 165°F). Shred the chicken with two forks if desired.
  7. Spoon the delicious mixture over a bed of rice or quinoa, sprinkle with chopped green onions, and enjoy!

For best results, use fresh pineapple and check chicken doneness towards the end of cooking to ensure it remains juicy.
