Ingredients
  

For the Meatballs
  • 1 pound ground beef (or ground turkey)
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped green onions
  • 3 cloves garlic, minced
  • to taste salt
  • to taste pepper
For the Sauce
  • 1 cup sweet chili sauce
  • 1 tablespoon soy sauce
For Garnish (Optional)
  • Pineapple chunks
  • Sesame seeds

Method
 

Preparation
  1. In a large bowl, combine the ground beef, egg, breadcrumbs, green onions, minced garlic, salt, and pepper. Mix until well combined.
  2. Scoop out a tablespoon of the mixture and roll it into a ball. Repeat until all the meat mixture is formed into balls.
  3. In a separate bowl, mix the sweet chili sauce and soy sauce until well blended.
Cooking
  1. Place the meatballs gently in the crockpot and pour the sauce mixture over them, ensuring each meatball is well-coated.
  2. Set the crockpot on low and let it cook for 6 hours or on high for about 3 hours until the meatballs are cooked through.
Serving
  1. Once done, remove the meatballs and serve them over steamed rice, garnished with pineapple chunks and sesame seeds if desired.

Notes

Don’t overmix the meat mixture; otherwise, your meatballs could become dense. Experiment with herbs and spices like ginger or cilantro to enhance the flavor profile. Use a meat thermometer to ensure the internal temperature of the meatballs reaches 165°F.
