  • 2 cups cooked chicken, shredded Use leftover chicken for convenience.
  • 1/2 cup sweet chili sauce
  • 4 large tortillas or wraps
Fresh Veggies
  • 1 cup lettuce, shredded
  • 1/2 cup bell peppers, sliced
  • 1/2 cup carrots, julienned
  • 1/4 cup green onions, chopped

Method
 

Preparation
  1. If you haven’t done so already, cook and shred your chicken. You can use leftover chicken for this, or quickly cook it in a skillet until tender.
  2. In a bowl, combine the shredded chicken with sweet chili sauce. Stir well to ensure the chicken is evenly coated.
  3. Lay the tortillas on a clean, flat surface. Start with placing a generous scoop of the chicken mixture in the center of each tortilla.
  4. Layer on the shredded lettuce, sliced bell peppers, julienned carrots, and chopped green onions for extra crunch and color.
  5. Fold in the sides of the tortilla, then roll it tightly from the bottom upwards to secure all the delicious fillings inside.
  6. Cut the wraps in half to make them easier to handle and serve immediately.

Notes

For a vegetarian option, substitute with grilled chicken or tofu. Layer veggies as close to serving time as possible for maximum freshness. If using older tortillas, warm them in a dry skillet to make them pliable.
