Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken thighs or breasts Thighs yield juicier results.
  • 1/2 cup sweet chili sauce Reserve half for later use.
For the Rice
  • 2 cups cooked jasmine rice
For the Vegetables
  • 1 cup colorful bell peppers, sliced Any color works well.
  • 1 cup broccoli florets
  • 1 tablespoon vegetable oil For sautéing.
  • 2 pcs green onions, sliced For garnish.
  • Sesame seeds For garnish.

Method
 

Preparation
  1. Cut the chicken into bite-sized pieces and marinate in half of the sweet chili sauce for about 15 minutes.
  2. While the chicken is marinating, cook the jasmine rice according to package instructions for 10-15 minutes.
Cooking
  1. Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the marinated chicken pieces and cook for 7-10 minutes until golden brown.
  2. Add the sliced bell peppers and broccoli florets to the skillet and stir-fry for an additional 5 minutes until veggies are tender yet crisp.
  3. Stir in the remaining sweet chili sauce to coat the chicken and vegetables evenly.
Serving
  1. In bowls, layer the cooked rice and top with the sweet chili chicken and vegetable mixture.
  2. Garnish with sliced green onions and sesame seeds before serving.

Notes

For a refreshing side, serve with cucumber salad or steamed edamame. Adjust spice levels with red pepper flakes or chili oil if desired. Prepping ingredients in advance can save time.
