Preparation
- Cut the chicken into bite-sized pieces and marinate in half of the sweet chili sauce for about 15 minutes.
- While the chicken is marinating, cook the jasmine rice according to package instructions for 10-15 minutes.
Cooking
- Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the marinated chicken pieces and cook for 7-10 minutes until golden brown.
- Add the sliced bell peppers and broccoli florets to the skillet and stir-fry for an additional 5 minutes until veggies are tender yet crisp.
- Stir in the remaining sweet chili sauce to coat the chicken and vegetables evenly.
Serving
- In bowls, layer the cooked rice and top with the sweet chili chicken and vegetable mixture.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
For a refreshing side, serve with cucumber salad or steamed edamame. Adjust spice levels with red pepper flakes or chili oil if desired. Prepping ingredients in advance can save time.
