  • 4 lbs beef brisket (halal, of course)
  • 2 cups onions, sliced
  • 1 cup bell peppers, sliced (any color)
  • 1 cup pineapple chunks (fresh or canned)
Sauce Ingredients
  • 1 cup brown sugar
  • 1 cup vinegar (apple cider or white)
  • 1/2 cup ketchup
  • 1/4 cup soy sauce (ensure it’s halal)
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • Salt and pepper to taste

Method
 

Preparation
  1. Place your brisket in a large roasting pan. Season generously with salt and pepper.
Making the Sauce
  1. In a bowl, combine the brown sugar, vinegar, ketchup, soy sauce, garlic, and ginger. Stir well until the sugar is dissolved.
Combining Ingredients
  1. Add the sliced onions and bell peppers on top of the brisket, followed by the pineapple chunks. Pour the sauce mixture over it all.
Cooking
  1. Cover the pan with aluminum foil and bake in a preheated oven at 325°F (165°C) for 3-4 hours, or until the brisket is tender.
Serving
  1. Once cooked, let the brisket rest for 10-15 minutes before slicing. Serve with the sauce and vegetables spooned over each slice.
