Preparation
- In a large bowl, whisk together honey, soy sauce, minced garlic, lemon juice, and black pepper until well combined.
- Add the cubed chicken breast into the bowl, ensuring all pieces are well coated. Cover it with plastic wrap and let it marinate in the refrigerator for at least 30 minutes. For optimal flavor, marinate for 2-4 hours if you have time.
- If using vegetables, thread them onto the skewers with the marinated chicken pieces, alternating chicken and veggies for a colorful presentation.
- While the skewers are soaking up the marinated goodness, preheat your grill to medium-high heat.
Grilling
- Place the skewers on the grill and cook for approximately 12-15 minutes, turning occasionally until the chicken is fully cooked (internal temperature should reach 165°F) and has nice grill marks.
Serving
- Remove the kabobs from the grill, let them rest for a couple of minutes, and serve them warm. You can drizzle some leftover marinade over the top for an extra boost of flavor.
Notes
To elevate your meal, consider pairing these kabobs with a refreshing cucumber salad or a side of fluffy jasmine rice. A citrusy coleslaw adds the right crunch and acidity to balance the sweetness of the kabobs.
