Preparation
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and pound them lightly with a meat mallet or rolling pin until they are about 1/4-inch thick.
Assembly
- Layer a slice of cheese and a slice of ham on top of each chicken breast, leaving a margin around the edges.
- Roll each chicken breast tightly, securing the filling. Use toothpicks if necessary.
Coating
- Set up three bowls: one with seasoned flour, one with beaten eggs, and one with breadcrumbs.
- Dredge each rolled chicken breast in flour, dip it in the egg mixture, then coat with breadcrumbs, pressing to adhere.
Cooking
- Heat olive oil or butter in a skillet over medium heat.
- Add the coated chicken rolls and cook until golden brown on all sides (approximately 2-3 minutes per side).
- Transfer the browned chicken to a baking dish and bake for 15-20 minutes, until cooked through and cheese is bubbly.
Serving
- Remove from the oven, let cool for a few minutes, then slice and serve.
Notes
For extra crispiness, use Panko breadcrumbs. Add finely chopped spinach or cooked mushrooms for a nutritious twist. Allow to rest before slicing.
