  • 4 pieces boneless, skinless chicken breasts
  • 4 slices Swiss or Gouda cheese Your favorite cheese can be used
  • 4 slices ham or favorite alternative
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs Panko for extra crispiness

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound them lightly with a meat mallet or rolling pin until they are about 1/4-inch thick.
Assembly
  1. Layer a slice of cheese and a slice of ham on top of each chicken breast, leaving a margin around the edges.
  2. Roll each chicken breast tightly, securing the filling. Use toothpicks if necessary.
Coating
  1. Set up three bowls: one with seasoned flour, one with beaten eggs, and one with breadcrumbs.
  2. Dredge each rolled chicken breast in flour, dip it in the egg mixture, then coat with breadcrumbs, pressing to adhere.
Cooking
  1. Heat olive oil or butter in a skillet over medium heat.
  2. Add the coated chicken rolls and cook until golden brown on all sides (approximately 2-3 minutes per side).
  3. Transfer the browned chicken to a baking dish and bake for 15-20 minutes, until cooked through and cheese is bubbly.
Serving
  1. Remove from the oven, let cool for a few minutes, then slice and serve.

Notes

For extra crispiness, use Panko breadcrumbs. Add finely chopped spinach or cooked mushrooms for a nutritious twist. Allow to rest before slicing.
