Ingredients
  

Salad Base
  • 4 cups kale, washed and chopped
  • 2 ripe peaches, sliced
  • 1 cup blueberries, washed
Toppings
  • 1/4 cup almonds or walnuts, chopped
  • 1/4 cup feta cheese, optional
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon honey or agave syrup, for vegan option
  • 1 juice of 1 lemon
  • Salt and pepper to taste

Preparation
  1. In a large bowl, add the washed and chopped kale. Drizzle with olive oil and massage the leaves gently with your hands for about 2-3 minutes.
  2. In a separate bowl, whisk together the honey (or agave syrup), lemon juice, salt, and pepper.
  3. Add the sliced peaches and blueberries to the kale. Pour the dressing over the salad.
  4. Gently toss everything together, ensuring the kale is coated with the dressing and the fruits are evenly distributed.
  5. Sprinkle the chopped nuts and feta cheese over the top. Serve immediately, or refrigerate for about 10 minutes to let the flavors meld.

Notes

If you can’t find fresh peaches, feel free to use nectarines or plums. This salad is best enjoyed the day it’s made to savor all those vibrant flavors and textures.
