  1. Start by washing your mixed berries thoroughly. If you’re using strawberries, hull and slice them into smaller pieces for easier mixing.
  2. In a saucepot, bring 2 cups of water to a gentle simmer. Add the gelatin (or agar-agar) and stir until fully dissolved, which usually takes about 2-3 minutes.
  3. Once the gelatin is dissolved, stir in 1/2 cup of sugar and 1 teaspoon of lemon juice until everything is combined.
  4. Remove the pot from heat and let it cool slightly for about 5 minutes. Gently mix in the washed berries while trying not to crush them.
  5. Pour the mixture into a mold or serving dish and refrigerate until set, approximately 4-6 hours, or overnight for best results.

Notes
