  1. Cook and Mash the Potatoes: Boil the peeled and cubed potatoes in salted water until tender (about 15-20 minutes). Drain and let cool slightly, then mash them until smooth.
  2. Prepare the Filling: In a mixing bowl, combine the grated cheese, chopped vegetables, and onions. Add salt, pepper, and stir until evenly mixed.
  3. Make the Pancake Mixture: In a large bowl, mix the mashed potatoes with the egg, flour, garlic powder, salt, and pepper until you have a smooth, moldable dough.
  4. Form the Pancakes: With clean hands, take a portion of potato dough, flatten it, and place a spoonful of the filling in the center. Fold the dough over to encase the filling and shape it into a round pancake.
Cooking
  1. Fry the Pancakes: Heat oil in a frying pan over medium heat. Once hot, add the pancakes (in batches if needed) and cook until golden brown on both sides (about 3-4 minutes per side).
