For the Potatoes
  • 4 large potatoes (russet or Yukon gold) Choose russet or Yukon gold for best results.
  • 2 tablespoons butter Use halal butter.
  • 1/2 cup milk Can use dairy or non-dairy alternatives.
  • 1/2 cup shredded cheese Cheddar or mozzarella work well.
  • 1/4 cup sour cream Or plain yogurt for a bit of tang.

For the Stuffing
  • 1 cup cooked meat or vegetables Options include ground beef, cooked chicken, or sautéed vegetables.
For Garnish

Method
 

Preparation
  1. Peel the potatoes and cut them into chunks. Place them in a pot of boiling salted water and cook until tender (about 15-20 minutes).
  2. Once the potatoes are cooked, drain them and return them to the pot. Add the butter, milk, sour cream, salt, and pepper. Mash until smooth and creamy. Add the cheese and mix well.
Shaping and Filling
  1. Preheat your oven to 375°F (190°C). Take a muffin tin and lightly grease it.
  2. Scoop the mashed potatoes into each muffin cup, pressing down to create a little well in the center for your filling.
  3. Carefully add your chosen meat or vegetables into the center of each potato nest.
Baking
  1. Bake in the preheated oven for about 15-20 minutes, or until the tops are slightly crispy and golden brown.
Serving
  1. Garnish with chopped chives or parsley before serving to add a fresh touch.

Notes

Make-ahead options: You can prepare the mashed potatoes a day in advance. Customize your stuffing to your liking for varied flavors.
