Strawberry Vanilla Bean Ice Cream: A Sweet Scoop of Bliss!

Nothing screams summer quite like luscious Strawberry Vanilla Bean Ice Cream! Imagine creamy, dreamy scoops embellished with fresh strawberries, melting away as you take that first tantalizing bite. This delightful dessert is a perfectly balanced blend of sweetness and tartness, which makes it a year-round favorite.

Ingredients

  • 2 cups fresh strawberries hulled and sliced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 vanilla bean split and seeds scraped (or 1 tablespoon pure vanilla extract)
  • Pinch of salt

Method

  1. Prepare the Strawberries: In a bowl, combine sliced strawberries with 1/4 cup of sugar and set aside. Let them macerate for about 15-20 minutes until they release their juices.
  2. Create the Base: In a separate mixing bowl, whisk together the heavy cream, whole milk, remaining sugar, salt, and the vanilla bean seeds (or extract) until the sugar is fully dissolved.
  3. Blend the Strawberries: Mash the macerated strawberries with a fork or a potato masher, but leave some chunks for texture. Fold the blended strawberries gently into the cream mixture.
  4. Chill the Mixture: Cover the bowl and place it in the refrigerator to chill for at least 2 hours. This step allows the flavors to meld beautifully.
  5. Churn in an Ice Cream Maker: Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions, usually around 20-30 minutes.
  6. Freeze Until Solid: Transfer the churned ice cream into an airtight container and freeze for at least 4 hours or until solid.
  7. Serve and Enjoy: Scoop your Strawberry Vanilla Bean Ice Cream into bowls and invite your loved ones to partake in this sweet delight.
