Ingredients
  

  • 2 cups fresh strawberries hulled and halved
  • 1 cup sugar
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 vanilla bean split and seeds scraped
  • Pinch of salt

  • Prepare the Strawberries: In a medium bowl, combine the halved strawberries and half a cup of sugar. Stir well and let sit for about 30 minutes to macerate.
  • Blend the Mixture: Once the strawberries are softened, blend them in a blender or food processor until smooth. For a chunkier texture, reserve some strawberry halves and mix them in later.
  • Make the Cream Base: In another bowl, whisk together the heavy cream, whole milk, the remaining sugar, vanilla bean seeds, and a pinch of salt until combined.
  • Combine: Fold the strawberry puree into the cream mixture until well incorporated.
  • Chill the Mixture: Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions, usually about 20-30 minutes.
  • Freeze: Pour the churned ice cream into a container and freeze for at least four hours, or until firm.
