Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and sugar until it's light and fluffy—approximately 3-4 minutes.
- Beat in the egg and vanilla extract until combined.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add this flour mixture to your butter mixture. Mix just until combined.
- Gently fold in the chopped strawberries, ensuring they are evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop dough onto a parchment-lined baking sheet, ensuring they are spaced about 2 inches apart.
Baking
- Place in the oven and bake for 12-15 minutes or until the edges are golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Serving
- Once cool, top with whipped cream before serving.
Notes
Store cookies in an airtight container at room temperature for 3-4 days. Freezing is also an option for up to a month.
