  • 1 tablespoon cornstarch Helps thicken the filling.
  • 1 teaspoon vanilla extract

For the Crisp Topping

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted Ensure butter is slightly cooled.
  • 1/2 teaspoon cinnamon
  • 1 pinch salt

Preparation

  • Preheat the oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.
  • In a mixing bowl, combine diced strawberries, chopped rhubarb, granulated sugar, cornstarch, vanilla extract, and lemon juice. Stir gently until the fruit is well coated.
  • In another bowl, mix together flour, rolled oats, brown sugar, melted butter, cinnamon, and salt until the mixture resembles coarse crumbs.

Assembly and Baking

  • Pour the fruit mixture into the prepared baking dish, spreading it evenly.
  • Top with the crisp mixture over the fruit, ensuring all areas are covered.
  • Bake in the preheated oven for 35-40 minutes or until the topping is golden brown and the filling is bubbling.

Serving

  • Allow to cool for at least 10 minutes before slicing into bars. Serve warm or at room temperature.

Notes
