When you think of the perfect spring dessert, what comes to mind? For me, it’s vibrant Strawberry Rhubarb Bars—a delightful fusion of sweet strawberries and tart rhubarb nestled in a buttery crust! These bars are not only visually appealing with their lovely pink and red hues, but they also burst with fresh flavors that can elevate any gathering. Did you know that rhubarb is often mistaken for a vegetable, despite being used in various desserts? It’s true! These bars are a celebration of this misidentified delight, bringing a burst of flavor that people rave about.

Ingredients

  • For the crust:
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • For the filling:
  • 2 cups chopped fresh strawberries
  • 2 cups chopped rhubarb
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. Make the Crust: In a medium bowl, combine the flour, sugar, and softened butter. Mix until the mixture resembles coarse crumbs. Press this mixture into the bottom of the prepared baking pan to create an even layer.
  3. Prepare the Filling: In a large bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, vanilla extract, and salt. Stir well until all the fruit is coated.
  4. Combine: Pour the fruit filling over the crust, spreading it evenly.
  5. Bake: Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and the filling is bubbly.
  6. Cool: Allow the bars to cool in the pan for at least 15 minutes before carefully lifting them out using the parchment paper. Let them cool completely before slicing into squares.
  7. Enjoy: Get ready to enjoy these delicious Strawberry Rhubarb Bars!
