Pastry and Filling
  • 1 package puff pastry sheets (thawed)
  • 2 cups fresh strawberries (sliced)
  • 3 tablespoons sugar adjust based on sweetness preference
  • 1 teaspoon vanilla extract
  • 1 egg for egg wash

Method
 

Baking Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine the sliced strawberries, sugar, and vanilla extract. Let this mixture sit for about 10 minutes.
  3. On a lightly floured surface, roll out the puff pastry sheets to your desired thickness.
  4. Cut the rolled pastries into squares or rectangles, about 4x4 inches.
  5. Place a spoonful of the strawberry mixture in the center of each pastry square.
  6. Fold the pastry over the filling to create a triangle or rectangle, then press the edges firmly to seal.
  7. Beat the egg and brush the mixture over the top of each pastry.
  8. Place the pastries on a baking sheet lined with parchment paper and bake for 20 minutes or until puffed and golden brown.
  9. Remove from the oven and let cool slightly before serving.

Notes

Feel free to swap strawberries for blueberries or raspberries. Avoid overfilling the pastries to prevent leaking. To store, let cool before placing in an airtight container.
