Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
- Add the eggs, one at a time, beating well after each addition, then mix in the vanilla extract.
- In another bowl, combine the all-purpose flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Line a 9x13 baking dish with parchment paper, allowing some overhang for easy removal.
- Press about 2/3 of the dough into the bottom of the prepared baking dish, creating an even layer.
- Spread the strawberry jam over the base, leaving a small border around the edges.
- Crumble the remaining dough over the strawberry jam layer.
Baking
- Bake the dish for 25-30 minutes, or until the bars are golden brown.
- Allow the bars to cool completely in the dish before lifting using the parchment overhang.
- Mix powdered sugar and milk to create a glaze, then drizzle it over the cooled bars. Finish with sprinkles.
Notes
Store bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Freeze for longer storage—up to three months. Reheat in the microwave or oven.
