Strawberry Mousse Cake: A Sweet Delight Awaits!

Ingredients
  

  • For the Sponge Cake:
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup whole milk
  • 1/4 cup vegetable oil
  • 1 tsp pure vanilla extract
  • For the Strawberry Mousse:
  • 2 cups fresh strawberries
  • 1/2 cup granulated sugar for mousse
  • 1 tbsp fresh lemon juice
  • 2 1/2 tsp unflavored gelatin powder
  • 3 tbsp cold water
  • 1 1/4 cups heavy cream
  • For the Strawberry Jelly Topping:
  • 1 1/2 cups fresh strawberries
  • 1/4 cup granulated sugar for jelly topping
  • 2 tsp unflavored gelatin powder
  • 2 tbsp cold water

Method
 

  1. Prepare the Sponge Cake:
  2. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
  3. In a mixing bowl, whisk together flour, baking powder, and salt.
  4. In another bowl, beat the eggs and sugar until light and fluffy.
  5. Carefully add in the warm milk, vegetable oil, and vanilla, mixing until well combined.
  6. Gradually fold the dry ingredients into the wet ingredients until just incorporated.
  7. Pour the batter into the prepared pan and bake for 25-30 minutes. Let cool completely.
  8. Make the Strawberry Mousse:
  9. Blend the fresh strawberries, sugar, and lemon juice in a bowl.
  10. In a small bowl, combine gelatin with cold water. Let it sit for a few minutes, then gently heat it to dissolve. Add it to the strawberry mixture.
  11. Whip the heavy cream to soft peaks and carefully fold it into the strawberry mixture. Chill until slightly set.
  12. Prepare the Strawberry Jelly Topping:
  13. Blend the strawberries with sugar in a bowl.
  14. Dissolve the gelatin in cold water and mix it into the strawberry puree.
  15. Assemble the Cake:
  16. Once the sponge cake is cooled, layer the strawberry mousse on top, and add the jelly topping. Chill again before serving.
