Strawberry Mousse

Ingredients
  

For the Mousse
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup heavy cream
  • 1/2 cup granulated sugar additional for strawberries
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin (ensure it is Halal-certified)
  • 2 tablespoons water for gelatin preparation

Method
 

Preparation
  1. Hull and slice 2 cups of fresh strawberries. Place them in a bowl and sprinkle with 2 tablespoons of granulated sugar. Allow them to sit for about 10-15 minutes.
  2. Transfer the strawberries to a blender and puree until smooth, leaving some small chunks for texture.
  3. In a mixing bowl, whip 1 cup of heavy cream on medium-high speed until soft peaks form (about 2-3 minutes).
  4. In a small bowl, combine 1 tablespoon of gelatin with 2 tablespoons of cold water and let it rest for 5 minutes. Then heat it gently until dissolved and cool.
Combining Ingredients
  1. Fold the strawberry puree into the cooled gelatin until well combined.
  2. Add 1 teaspoon of vanilla extract.
  3. Gently fold in the whipped cream using a spatula.
Chilling and Serving
  1. Transfer the mousse into serving bowls or cups and refrigerate for at least 2 hours, or until set.
  2. Once set, serve chilled with additional fresh strawberries or desired toppings.

Notes

Can be refrigerated for up to 3 days in an airtight container. Best when enjoyed fresh. For a vegetarian version, substitute gelatin with agar-agar.
