Strawberry Mango Popsicles

A blissful blend of sweet strawberries and tropical mangoes, these popsicles are perfect for cooling down on a hot summer day.

Ingredients
  

Fruit Ingredients
  • 2 cups strawberries, hulled and sliced
  • 2 cups mango, peeled and diced
Flavoring
  • 1/4 cup sugar or honey (to taste) Adjust based on sweetness preference
  • 1 cup coconut water or juice (optional) For a tropical twist

Method
 

Preparation
  1. Rinse the strawberries, hull them, and slice them into halves or quarters, depending on your preference.
  2. Peel and dice the mangoes into small cubes.
Blending
  1. In a blender, add the sliced strawberries, diced mangoes, and sugar or honey. If using coconut water or juice, add that in as well. Blend until smooth.
  2. Taste the mixture and adjust sweetness by adding more sugar or honey if needed.
Molding
  1. Carefully pour the blended mixture into popsicle molds, leaving a little space at the top for expansion.
  2. Insert popsicle sticks into the molds. If your molds lack a built-in support for the sticks, freeze them for about 1 hour until slightly solid, then add the sticks.
Freezing
  1. Place the molds in the freezer and let them freeze for at least 4 to 6 hours or until solid.
Serving
  1. Once frozen, run warm water over the outside of the molds for about 30 seconds to loosen the pops. Gently pull out the popsicles and enjoy!

Notes

Store popsicles in an airtight container in the freezer for up to 2-3 months to avoid freezer burn. Enjoy them frozen, do not reheat.
