Wet Ingredients
  • 1 cup unsalted butter Melted
  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon zest
Dry Ingredients
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1 pinch salt
Mix-Ins
  • 1 cup fresh strawberries Diced

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a saucepan, melt the butter over low heat and allow it to cool slightly.
  3. In a large mixing bowl, combine melted butter, brown sugar, and granulated sugar until well mixed. Beat in the eggs one at a time, then add vanilla extract and lemon zest.
  4. In a separate bowl, whisk together the baking powder, baking soda, flour, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Gently fold in the diced strawberries.
Baking
  1. Pour the batter into the prepared baking pan and smooth it out evenly.
  2. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the blondies to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Serve with a scoop of vanilla ice cream or whipped cream. Store in an airtight container at room temperature for up to 3 days, or refrigerate for a week.
