Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a saucepan, melt the butter over low heat and allow it to cool slightly.
- In a large mixing bowl, combine melted butter, brown sugar, and granulated sugar until well mixed. Beat in the eggs one at a time, then add vanilla extract and lemon zest.
- In a separate bowl, whisk together the baking powder, baking soda, flour, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Gently fold in the diced strawberries.
Baking
- Pour the batter into the prepared baking pan and smooth it out evenly.
- Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the blondies to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
