Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Mix in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Carefully fold in the diced strawberries until evenly distributed through the dough.
Baking
- Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet. Leave some space between each cookie as they will spread slightly.
- Bake for around 12-15 minutes, or until the edges are lightly golden.
- As soon as the cookies come out of the oven, gently press a chocolate kiss into the center of each cookie.
Cooling
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
These cookies can be served alone or with milk. Consider pairing them with vanilla ice cream or fresh whipped cream.
