Ingredients
  

For the cookie dough
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, diced (and drained)
  • as many as you need Chocolate kisses

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Carefully fold in the diced strawberries until evenly distributed through the dough.
Baking
  1. Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet. Leave some space between each cookie as they will spread slightly.
  2. Bake for around 12-15 minutes, or until the edges are lightly golden.
  3. As soon as the cookies come out of the oven, gently press a chocolate kiss into the center of each cookie.
Cooling
  1. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be served alone or with milk. Consider pairing them with vanilla ice cream or fresh whipped cream.
