Preparation
  1. Wash the cucumbers and strawberries thoroughly.
  2. Slice the cucumbers into thin rounds or half-moons based on your preference.
  3. Hull and slice the strawberries into quarters.
Mix and Combine
  1. In a large bowl, combine the sliced cucumbers, strawberries, and red onion (if using). Mix gently to avoid bruising the fruit.
  2. In a small bowl, whisk together the honey (or maple syrup), lemon juice, salt, and pepper until well combined.
  3. Drizzle the dressing over the cucumber and strawberry mixture. Toss gently until everything is well coated.
  4. Add the chopped mint leaves for a refreshing kick and toss again.
Serving
  1. Serve immediately, or refrigerate for up to an hour to meld flavors. Toss again before serving if it sits.

Notes
