Ingredients
  

For the Crust and Topping
  • 1.5 cups all-purpose flour For both crust and topping
  • 0.5 cups rolled oats
  • 0.5 cups brown sugar
  • 0.25 teaspoon salt
  • 0.5 teaspoon baking powder
  • 0.5 cups unsalted butter, softened
For the Strawberry Filling
  • 2 cups crushed strawberries Fresh or thawed frozen strawberries
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
For Additional Flavor
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine flour, rolled oats, brown sugar, salt, and baking powder. Mix well.
  3. Cut in the softened butter until the mixture resembles coarse crumbs.
  4. Reserve half of this crumbly mixture for topping the bars and press the other half evenly into the bottom of a greased 9x9-inch baking pan.
Strawberry Filling
  1. In a separate bowl, mix crushed strawberries, granulated sugar, lemon juice, and cornstarch. Stir well until combined.
  2. Pour the strawberry mixture over the crust in the baking pan, spreading it evenly.
Assembly and Baking
  1. Crumble the reserved crumb mixture over the strawberry layer.
  2. Place in the oven and bake for about 35-40 minutes or until the topping is golden brown.
  3. Once baked, allow the bars to cool in the pan before cutting into squares and serving.

Notes

For variations, you can swap strawberries for blueberries or raspberries. For gluten-free options, use a gluten-free flour blend. These bars can be stored in an airtight container for up to 5 days in the fridge or frozen for up to 3 months.
