- In a medium bowl, combine flour, rolled oats, brown sugar, salt, and baking powder. Mix well.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- Reserve half of this crumbly mixture for topping the bars and press the other half evenly into the bottom of a greased 9x9-inch baking pan.
Strawberry Filling
- In a separate bowl, mix crushed strawberries, granulated sugar, lemon juice, and cornstarch. Stir well until combined.
- Pour the strawberry mixture over the crust in the baking pan, spreading it evenly.
Assembly and Baking
- Crumble the reserved crumb mixture over the strawberry layer.
- Place in the oven and bake for about 35-40 minutes or until the topping is golden brown.
- Once baked, allow the bars to cool in the pan before cutting into squares and serving.
