Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin pan with paper liners or grease it lightly.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, beat the melted butter, softened cream cheese, eggs, and vanilla extract together until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, gently stirring until just combined. Be careful not to overmix; it’s okay if there are a few lumps!
  5. Gently fold in the chopped strawberries, ensuring they are evenly distributed within the batter.
  6. Using a muffin scoop or spoon, fill each muffin cup about 2/3 full with the batter.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Cooling & Serving
  1. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.

Notes
